Bacon and Chive Eggs In Clouds Recipe

Are eggs in clouds really that good?

This is seriously the only Eggs In Clouds recipe you will ever need. Packed full of tasty bacon bits, fresh chives and grated parmesan – this beauty is a flavour party waiting to happen!

You could just as easily have them plain without any fillings, and enjoy as you would a fried egg. Alternatively, you could kick it up a notch and throw in some chilli flakes. The choice is yours!

It’s perfect for any time of the day too. Enjoy as a light breakfast or brunch, pair with some chunky toast for lunch or even use as a tasty starter.

I’m always looking for new ways to cook eggs, and this is probably one of my favourites. It’s a guaranteed way of making a boring breakfast more exciting! A bit like when you were a kid and your parents made you an egg in a hole bacon sandwich. Exciting!

Ingredients

Here is what you will need to serve 2.

  • 3 Slices of Smoked Streaky Bacon
  • 2 Large Eggs
  • 1 heaped tbsp Fresh Chives, Chopped
  • 20g (1/4 Cup) Parmesan Cheese, Grated
  • Pepper

Essential equipment

  • 2 x Baking Trays/Sheets
  • Silicone Baking Mat or Baking Paper
  • Foil
  • Large Bowl
  • Small bowl or Glass
  • Whisk
  • Spatula

Instructions

Preheat your oven to 200°C/Fan 180°C/392ºF and line your baking tray/sheet with a silicone baking mat or baking paper.

While the oven is preheating, line another small tray in foil and lay on your streaky bacon (3 x slices). Place into the oven (don’t worry that it’s not up to temperature) and bake until crispy, turning once halfway through the cooking time. Around 15-20 minutes. (If you’re short on time, you can make air fryer bacon instead.)

When the bacon is cooked, soak up any excess grease with kitchen roll and chop into small pieces. Set to one side until needed.

Next, separate the eggs (x 2 large). Put the whites into a large bowl and the yolks into separate small bowl or glass.

Then whisk the egg whites until very thick and almost shiny. Stiff peaks will form and hold their shape well.

Next, tip in the chopped bacon, chives (1 heaped tbsp), grated parmesan (20g | 1/4 Cup) and a pinch of pepper to season. Carefully fold in with a spatula, being careful not to knock out any of the air, until the ingredients are just incorporated.

Spoon the mixture out onto your prepared baking sheet into two separate mounds.

Then make a small dip in the middle of each one, and carefully slide the egg yolks back into their rightful place.

Finally, bake in the preheated oven for 7-8 minutes until cooked through and light golden on top. Serve immediately.

    Preheat your oven to 200°C/Fan 180°C/392ºF and line both trays. One with a baking mat or paper, and the other with foil.

    1. Place the bacon onto the foil lined tray and pop into the oven (It doesn't matter if it's at temperature or not). Cook for 15-20 mins until crispy, then cut into small pieces. Next, separate the eggs - place the whites into a large bowl and the yolks into a small bowl. Whisk the egg white to stiff peaks, it should easily hold it's shape.
    2. Gently fold in the chopped bacon, chopped chives, grated parmesan and a little pepper.
    3. Divide the mixture and form into two mounds on the mat/paper lined tray.
    4. Make a slight well in the centre of each one, and top with the yolks.
    5. Bake in the preheated oven for 7-8 minutes until lightly golden and cooked through.

Notes

Serve immediately. Add chunky toast for a fuller meal.

I like runny yolks...I wonder if this yoke would be baked hard after 7-8 mins?

Hi Leanne. I guess it depends on your oven (one oven acts slightly different to another!) You could always try adding the yolk later on in the cooking time if you'd prefer? Emma x
