I know right? I know healthy isn’t usually my bag but, it turns out, there really is such a thing! Who’d have thought you could have a Healthy Chocolate Chip Flapjack that was both good for you and down right delicious?!

Healthy Chocolate Chip Flapjack – Step by Step Picture Recipe

Here is what you will need to make 16 bars.

Ingredients

  • 150g Biscoff Spread
  • 2 tbsp Coconut Oil
  • 85ml (120g) Honey
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 300g Rolled Oats
  • 50g Soft Light Brown Sugar
  • 1/2 tsp Salt
  • 100g Milk Chocolate Chips

Essential Equipment

  • 20cm (8″) Square Baking Tin

Instructions

First, lightly grease and line your baking tin with baking paper then preheat your oven to 180°C/Fan 170°C.

In a small bowl, melt together the Biscoff spread and the coconut oil in the microwave for 30 seconds. Mix well until smooth.

Pour the Biscoff mixture into a large bowl and add the honey, egg and vanilla extract. Mix it all together until everything is nice and smooth.

Next, add the rolled oats, sugar and salt and gently fold it all together until everything is nicely coated.

Finally, fold through 3 quarters of the chocolate chips until evenly distributed.

Tip the flapjack mixture into the prepared tin then scatter over the remaining chocolate chips. Press in until level.

Bake in the preheated oven for 20-25 minutes until a deep golden brown on top.

Allow to cool for 10-15 minutes in the tin before transferring to a wire rack to cool completely before slicing into 16 bars. (4 x 4 grid.)

Store in an airtight container (I prefer metal) at room temperature and consume within 7 days.

And there you have it! A simple and delicious, healthy snack to keep you on the straight and narrow this January. Well, mostly anyway! These surprised me a little. Not only in that they are absolutely delicious but that even with just 2 tbsp of coconut oil, they actually taste like coconut!
